Who doesn’t love to eat apples and bananas for breakfast?

These scrumptious breakfast bars are so delicious that they have been featured in the St. Croix Vegan School Menu at the author’s old high school, St. Croix Central. The ladies on the health board gave these apple banana bars a 5 star approval and this recipe has become an Honor Family favorite.
1 ½ Cups Natural all purpose flour

1 ½ Teaspoons of baking powder
1/8 Teaspoon salt
½ Cup butter softened (1 stick not melted)
2/3 Cup sugar
3    Large bananas peeled/mashed
½ Teaspoon vanilla
1  Apple peeled and grated (3/4 cup grated apple)
Topping:

½  Teaspoon cinnamon

1/4 Teaspoon nutmeg

3 Tablespoons sugar

Preheat oven 350 Degrees Fahrenheit and butter an 11 x 7 inch baking dish. If you do not have this size baking dish you can use a baking dish that is similar in size.  Sift flour, baking powder, and salt in a medium bowl. Set aside.  Beat butter, sugar, bananas, vanilla in large bowl with mixer at high speed. You can also use a sturdy mixing spoon if you do not have a mixer…Be sure to mix until well blended.  Add apples and add dry ingredients. Pour into dish.  Combine the topping ingredients in a small bowl. Sprinkle the topping evenly over the batter.   Bake for 30 to 35 min.

Cut into bars after cooled serve with tea. Yum!!!
